Aromas do Sul is a company with a diversified production, divided between two wineries strategically located to meet the specific needs of the winemaking process.


Cellar 1 - Herdade da Moita
Located on the outskirts of Évora, the Adega da Herdade da Moita has been the heart of Aromas do Sul’s production since 2004. This winery is designed for temperature-controlled fermentation and storage. Here, the grapes are carefully processed and fermented, ensuring the quality and integrity of the aromas and flavors of each variety.
Cellar 2 - Parque Industrial e Tecnológico de Évora
The winery located in the Évora Industrial and Technological Park is dedicated to the final stage of the winemaking process. This is where the final batches are prepared, the wines are carefully evaluated and the finished product is bottled and labeled. In addition, this winery houses a barrel aging room, where the wines have the opportunity to mature and develop complexity before being released onto the market. Since 2014, this facility has played a key role in ensuring the quality and consistency of Aromas do Sul wines.


Grape Varieties
Aromas do Sul's red wines are a true expression of traditional Alentejo grape varieties. From the full-bodied Syrah to the elegant Castelão, including the expressive Alicante-Bouschet, the versatile Trincadeira, Petit Syrah and Aragonês, each variety contributes its unique characteristics to the complexity and richness of our red wines. The white wines are made from the Antão Vaz, Arinto and Alvarinho grape varieties, offering freshness, vivacity and a wide range of aromas and flavors.

Location
The production and winemaking cellar is located in Herdade da Moita (Montemor-o-Novo) and has existed since 2004. The storage and finished product cellar is located in the Évora Industrial and Technological Park and has existed since 2014.
